Like so many others I have the spring sniffles. Changing weather, extra pollen all play together to make me miserable. Also, spring seems to always be our busiest time. Our boys play baseball on top of their regular activities. They aren't in the same age division so we wind up doubly busy. On these days easy meals are important or we'll wind up hitting a drive-thru. Not a good way to spend our money or treat our bodies. Spring soups are our best friends. Not the soups that take all day to make. Quick, delicious soups that are light and filling.
I've been playing around in the new commercial kitchen we're putting in our basement. (I'm almost done all the approval processes with the city, woohoo!) I've come up with a simple solution that puts a mug of creamy soup in our hands to fill our bellies on the way to whichever activity is scheduled. Or add a punch of flavour to the bone broth I sip in the mornings instead of coffee, especially when I'm under the weather. Powdered vegetables and fruit. So simple. So nutritious. If you have bone broth you can have soup in just a coupe of minutes. If you don't have bone broth you need to take a class with me and learn all about this amazing staple! Contact me, I'll set you up!
1 litre bone broth, 2-3 tablespoons carrot powder, 1 teaspoon ground coriander, salt and pepper to taste. Mix everything together and heat. It's ready when it's hot enough for you. Serve with a spoon of creme fraiche, sour cream or heavy cream and a sprinkle of cilantro. Enjoy!
